Ella without the crowds: timing, hikes and where to eat
The Nine Arch Bridge at dawn, which of the two hikes to pick, the waterfall worth swapping for Ravana, and honest tuk-tuk rates in the one town where apps do not work. Built in 1921 from brick, rock and cement with no steel at all, the bridge spans a jungle gorge and is the single most photographed thing.

The Nine Arch Bridge, done properly
Built in 1921 from brick, rock and cement with no steel at all, the bridge spans a jungle gorge and is the single most photographed thing in the hill country. That is the problem: by 10am it is a circus.
Be there between 6am and 6:30am instead. The mist is still lifting off the tea, the light is soft, and you will have the span largely to yourself. Ask your guesthouse for the morning train crossing time so you can catch the locomotive rounding the bend, the shot everyone else is queuing for later in worse light.

Ella Rock or Little Adam's Peak?
Ella Rock is the real trek: 2 to 3 hours round trip, starting along the live railway tracks before cutting up into the hills. Start at 5:30am. By 10am the heat is punishing and white mist often rolls in and erases the view entirely. Ignore anyone loitering at the trailhead who tells you the path is closed or that you are going the wrong way; it is a standing routine to sell guide services.
Little Adam's Peak is the easy win: a well-made 45 minute stroll for nearly as much reward. Go at sunset, when golden light floods the Ella Gap. If you only have energy for one, this is the better use of an evening.

Skip Ravana, drive to Diyaluma
Ravana Falls sits directly on the main road, which is exactly why it is packed with coaches and vendors. It is pretty and takes ten minutes.
An hour away by tuk-tuk is Diyaluma, the island's second highest waterfall at 220 metres. You hike to the top and swim in natural rock pools right on the cliff edge, looking straight down the drop. It is a completely different order of experience and the reason to keep a driver for the day.

Tuk-tuks: the one town where the app fails
Generic advice says use PickMe. In Ella that advice is wrong. Local drivers protect the territory aggressively and app drivers barely operate here, so you cannot rely on hailing one.
Download it anyway and use it as a price reference: punch in your destination to see the fair meter rate, then negotiate from there. Realistically expect about Rs 500 minimum for a short hop around town, and roughly Rs 8,000 (about US$25) for a full day covering the bridge, waterfalls and viewpoints. The cleanest route to a fair price is to have your guesthouse call their own trusted driver.

Eating past the tourist tax
Ella is gentrified: neon signs and avocado toast usually mean watered-down spice at a premium. For kottu, the chopped-roti dish you hear being made before you see it, go to Matey Hut near the tunnel or Dewmini Roti Shop tucked down a back alley, both word-of-mouth places with no gimmicks. At night, follow the rhythmic metal chopping around the town market and eat it straight off the griddle.
Lamprais, the Dutch-Burgher parcel of rice, curry and sambol baked in banana leaf, is genuinely best in Colombo rather than up here, but Cafe Chill does a good one despite being the loudest place in town, and Cafe Samsara does a strong modern version.

Two more worth the time
The Uva Halpewatte tea factory runs tours through working British-era machinery, rolling and drying, ending in a proper tasting; you are in the middle of Ceylon tea country and this is the least touristy way to understand it. And a cooking class (Matey Hut and Lanka's among others) teaches you to scrape coconut, grind spice on stone and cook five or six curries in clay pots, which travels home better than any souvenir.
